Fresh & Flavorful Greek Salad with Za’atar Vinaigrette

When I first shared this Greek Salad recipe during my Salad Sunday series, it became an instant favorite. It's bright, refreshing, and loaded with flavor. It works as a side or stands tall as the main event. Now that I’m rebuilding my blog after switching brokerages, I’m excited to give this crowd-pleaser a permanent home here on JoMaine's Kitchen.


What makes this Greek Salad stand out? It's the za'atar vinaigrette. Earthy, tangy, and perfectly herby, it ties everything together beautifully.

Greek Salad

Ingredients:

Salad:

2 large tomatoes

1 bell pepper

3 Persian cucumbers

1 small red onion

1/4 cup Kalamata olives

1/4 cup Castelvetrano olives

1/2 cup feta cheese (chunks or crumbled)

Large handful fresh parsley, chopped


Dressing:

1/3 cup olive oil

1 tablespoon za'atar

1 tablespoon dried oregano

Salt and pepper to taste


Instructions:

1. Prep the Veggies: Wash all your vegetables. Chop the tomatoes, bell pepper, cucumbers, and red onion into bite-sized pieces.

2. Build the Base: Add the chopped vegetables, Kalamata olives, and Castelvetrano olives to a large mixing bowl.

3. Add the Good Stuff: Crumble or cube the feta and add it to the bowl. Sprinkle the chopped parsley over everything.

4. Make the Dressing: In a small bowl, whisk together the olive oil, za'atar, oregano, salt, and pepper until well combined.

5. Dress and Toss: Pour the dressing over the salad and gently toss until everything is evenly coated.

6. Serve and Savor: Serve right away to enjoy the fresh, bold flavors at their best.


Jermaine's Tips

  • Za'atar can be found at most specialty or Middle Eastern markets, and a little goes a long way

  • Add grilled chicken or chickpeas if you want to turn this into a hearty meal

  • This salad can be stored for a day in the fridge, but it’s best fresh
