Welcome to the first installment of Soup(er) Sundays lololol! 🍲

Today, we're diving into a warm & comforting bowl of Zuppa Toscana, a perfect blend of Italian sausage, tender potatoes, kale, & creamy broth. This hearty soup is sure to become a fall favorite. Follow along as I walk you through the steps to make this on your own.

Ingredients:

1 lb Italian sausage

1 large onion, diced

3 cloves garlic, minced

6 cups chicken broth

4-5 russet potatoes, thinly sliced

4 cups kale, chopped

1 cup heavy cream

Salt and pepper to taste


Instructions:

1. Brown the sausage in a large pot over medium heat.

2. Add onions and garlic, sautéing until soft.

3. Pour in chicken broth and bring to a simmer.

4. Add potatoes and cook until tender.

5. Stir in kale and cook until wilted.

6. Reduce heat and stir in heavy cream.

7. Season to taste, serve hot, and enjoy!
